Dry Potato Curry

Happy Curry Week All! Today it is Dry Potato Curry a great accompaniment to Lemon Rice. 

Ingredients

  • Boiled Potatoes 4 medium sized (boil it as soft as jacket potatoes)
  • Two tablespoons oil
  • Chilli Powder 1 Tsp
  • Turmeric – ½ tap
  • Salt to taste
  • Mustard Seed – 1/2 Tsp
  • Urid Dal – 1tsp
  • Salt to taste

Method

  • Peel and dice the potatoes into ¾ inch cubes.
  • Heat a frying pan with one tablespoon of oil. Add the mustard seeds and urad dal and wait until the mustard splits
  • Add the potatoes and mix well.
  • Add the chilli powder, turmeric and salt according to taste.
  • Add another tablespoon of oil and fry the potatoes on low to medium heat for another ten minutes turning around the potatoes with a spatula every two minutes.
  • Switch off and serve hot. It is a good accompaniment with lemon rice, coconut rice or roti.
