Broccoli Potato Kugel

Instructions

  • Beat the eggs and add mayonnaise, sea salt, and onion flakes.
  • Add all vegetables to beaten egg mixture and pour into greased baking dish.
  • Bake at 350*F uncovered for about 45 minutes.

  • 4 potato Potato (shredded – organic)
  • 4 medium Carrots (shredded)
  • 908 gm Frozen broccoli (thawed, drained)
  • 5 medium egg Egg
  • 3/4 cup Mayonnaise, low fat (or avocado mayo)
  • 2 tbsp Onion, dehydrated flakes
  • 1 tbsp Sea salt

Notes:

For a lower glycemic and high fiber option - use sweet potatoes instead of potato.

Broccoli is a cruciferous vegetable - it is a great source of fiber and vitamin C!
